Keto Thanksgiving Sides

 

Keto Cauliflower Mash Recipe

 Ingredients

·       1 head cauliflower

·       5 cloves garlic, peel removed

·       4 cups chicken or vegetable broth

·       2.5 tablespoons butter

·       1/2 tablespoon olive oil

·       Salt and pepper to taste

Directions:

Remove leaves from cauliflower and chop head into pieces. In large pot, add cauliflower, broth, garlic, and then enough water to cover the cauliflower. Bring to boil, then simmer for around 18 minutes until cauliflower is very tender. Strain the liquid leaving just cauli and garlic. Return to pot and add butter, oil, and seasoning. Use potato masher to mash to desired creaminess.

½ cup serving = 2.6g cabs

 

Keto Roasted Veggie Recipe

 Ingredients

Mushroom, zucchini, asparagus

 

Directions:

  1. Slice zucchini into half inch thick circles. Break off bottom end of asparagus and cut rest in half. Take off stem of mushroom and slice into thirds.

  2. Toss all veggies in large bowl with salt, pepper, olive oil.

  3. Spread in a glass pan and bake at 395 degrees until cooked to desired doneness.

1.8g carbs per 50g serving.
