Zucchini Fritters With Sweet Corn

Today we’re making a healthy fritters recipe with sweet corn and zucchini. These vegetarian fritters are an easy and healthy way to get vegetables in your fritters while maintaining the delicious, crunchy bite you hope for.

This recipe is perfect for any meal and comes with the edition of a killer cannellini bean recipe to round out the whole dish! We’ll let the picture below do the talking, I mean how good does this look!? Let’s get to the cooking!

Sweet Corn & Zucchini Fritters! The perfect, healthy fritters, easy to make for breakfast or dinner!

Sweet Corn Fritters Ingredients:

1 zucchini, grated
1 can (250g) sweet corn
2 tbsp. of finely chopped spring onions
1/2 tsp. red chili flakes
1 tsp. paprika
Handful of fresh coriander, chopped
60g flour
1 egg
1/4 tsp. salt

 

Cannellini Bean Recipe Ingredients:


1 can cannellini beans
1 can chopped tomatoes
2 tbsp. tomato purée
1 tsp. cumin
1 tsp. paprika
1/4-1/2 tsp. chili powder
1 tbsp. maple syrup
1 tbsp. tamari or soy sauce
Salt to taste

 

How to Make Sweet Corn Fritters:


1. Grate your zucchini; make sure you squeeze all the liquid out before placing it in a large bowl.
2. Pulse your sweet corn in a food processor.
3. Add the sweet corn and all remaining ingredients to the bowl and mix well.
4. Place a pan over a medium heat with a drizzle of olive oil. Add 2 tbsp. of the mixture at a time and flatten slightly to make your fritter have a more rounded shape.
5. Fry on either side until cooked and slightly browned 


Cannellini Bean Recipe:

1.Heat everything in a pan until warm and slightly thickened

 

Serve

Serve like the picture with a dollop of guacamole and a sprinkle of salt for a healthy vegetarian recipe!
